IFST successfully held the 2021 International Symposium on Grain Science and Technology

Recently, the 2021 International Symposium on Grain Science and technology was held in Beijing, sponsored by the Institute of Food Science and Technology, Chinese Academy of Agricultural Sciences (IFST, CAAS) and co-sponsored by International Cooperation Research Center for Cereal Science of Shaanxi. More than 50 well-known experts in the field of grain science attended this conference, including scholars from Australia, the United States, Canada, the Netherlands, and China.

 

Kang Wei, Secretary of the Party committee of IFST, CAAS, attended the opening ceremony and delivered a speech. He pointed out that scientific innovation in grain processing is the engine to promote the food security, nutrition, human health development. He hoped that all the experts would collaborate more often with complementing each other's advantages, jointly tackle the key problems for the development of Grain processing, and stimulate the fast development of the grain industry.

 

Ke Xiaohua, Deputy Director General of Department of International Cooperation of CAAS, congratulated the successful holding of the conference. She pointed out that international exchanges and cooperation are important for scientific and technological development. She wished the participating scholars to fully share their insights and to provide more strong scientific and technological support for the improvement of human dietary nutrition and health.

 

Experts attending the meeting discussed the basic and cutting-edge research topics, industrial problems and solutions in the fields of grain processing, such as the effects and mechanisms of starch and protein structure on the digestion properties, palatability, texture properties of products, wholemeal processing technology, research and development of low GI products, scientific connotation of healthy grains, quality evaluation of wheat and flour products, characteristics and formation mechanism of grain flavor substances. Food nutrition and safety were also deeply discussed in terms of wheat mycotoxin prevention and control, demand and key production technologies of low bacterial wheat flour.

 

This symposium is the fourth international academic conference hosted by IFST, CAAS, which aims to promote collaborative innovation in the field of grain science and technology. Practical and cutting-edge researches are well exchanged during this symposium.
