1. Food safety and risk assessment

Establishment of risk assessment theory and method system in agricultural product processing
Risk assessment of unknown hazards and processing factors in agricultural product processing
Quality safety and risk assessment of food packaging materials

2. Food nutrition and functional factors utilization

Establishment of the functional evaluation system in both vitro and vivo including cell, zebra fish and rodents models and evaluation methods
Utilization of the bioactive ingredient and mechanism of functional factors
Development of the functional food

3. Processing of bulk and characteristic agricultural products and comprehensive utilization of by-products

Processing technology of soybean protein structure and function and traditional meat
Key technology of comprehensive utilization of agricultural products processing by-products such as Dendrobium and Wolfberry
