Education background

Xuanming Tang obtained Bachelor Degree of Science from Shandong University in 1985, and Ph.D. of Biology from CAAS in 2001.

Research interest

1.Effective utilization of edible fungi compost

Cottonseeds is the main constitute for solid culture of edible fungi, while gossypol in the cottonseed is negative for cyclic utilization of edible fungi compost. The mechanism of edible fungi to biodegrade gossypol in its solid culture is studied. Also, fermentation technology is applied for compost process, in order to develop new source of organic fertilizer. Additionally, active compounds like peptides and polysaccharides, are isolated from edible fungi and their mechanism are investigated.

2. cold resistance and pathology of postharvest and fresh-cut fruit and vegetable

Salicylic acid (SA) and gibberellic acids (GA3) contribute to defense responses of fruits and vegetables during postharvest storage. The mechanism of cross talk between these two plant hormones under abiotic and biotic stress conditions was studied.

Surface browning is an important cause of deterioration of fresh-cut apples during postharvest handling. Nitric oxide (NO) acts as an important signal molecule mediating a variety of plant responses. We studied the effect of NO on enzymatic browning and quality control of fresh-cut apples, and developed effective postharvest methods to maintain the product quality and shelf-life..

3.Fermented fruit and vegetable juice nutrition changes and quality control study

Microbial fermentation of fruit and vegetable juices; studying the quality and flavor changes by monitoring total sugar, reducing sugar, acid, polyphenols before and after fermentation; exploring change mechanisms; determining the optimum technology of fermented fruit and vegetable juice.

Fruit and vegetable residue biological recycling Microbial fermentation or enzymatic hydrolysis of apple pomace to produce pomace wine; studying the quality and flavor changes by monitoring the cellulose, total sugars, reducing sugars, alcohol, pectin and polyphenol variation after fermentation; exploring change mechanisms; determining the optimal process of pomace wine
