赵垚垚

一、个人简介

赵垚垚,女,博士,副研究员,硕士生导师。中国农业科学院农产品加工研究所果蔬加工智造与营养健康创新团队科研骨干。博士毕业于中国农业大学,中国农业科学院出站博士后,入选北京市“高创计划”青年人才托举工程及加工所相关人才项目。

二、主要研究领域

果蔬速冻解冻品质调控与营养健康。主要研究方向:

1.果蔬物质基础与营养品质形成机理,基于不同果蔬品种的物质基础差异,构建涵盖特征品质与功能品质的综合评价体系;

2.低温技术调控果蔬采后及果蔬制汁/浆品质变化机理与技术研究,揭示低温保鲜加工处理过程中果蔬原料及果蔬汁/浆感官、理化与营养品质的变化规律与调控机制;

3.基于物理场协同作用低温保鲜加工技术,研发保鲜加工新工艺,创制高品质系列新产品。

三、承担项目/课题

近年来主持国家自然科学基金、“十四五”国家重点研发等国家或省部级项目4项,参与国家及省部级项目20余项。主要项目如下:

1.主持国家自然科学基金青年项目“PpFER介导水杨酸缓解采后桃果实冷害机制研究”;

2.主持北京市自然科学基金面上项目“脱落酸与PpFER协同调控PpFAD2操纵采后桃果实耐冷性机理研究”;

3.主持国家重点研发计划项目任务“西北特色果品节能降耗速冻切分与品质劣变调控技术研究”;

4.主持国家重点研发计划项目任务“生姜、蒜苔中“三剂”残留、迁移、转化规律及互作机制研究”。
